酱香茄子水饺
饺子对于我们北方人来说真是太实惠了,面皮当主食,一年四季的新鲜蔬菜甚至晒干的菜都可以入馅做饺子。逢年过节,更是要包一顿饺子尝尝。

Details of ingredients

  • 肉馅(肥瘦肉2:8或者3:7)400克
  • 圆茄子2个
  • 中筋面粉800克
  • 香葱8棵
  • 植物油30克
  • 凉水450克左右
  • 黄豆酱80克
  • 酱油30克
  • 蚝油30克
  • 3克

Steps to make 酱香茄子水饺

  • 1.全部材料准备好:中筋面粉,揉面用凉水;猪肉馅,圆茄子,黄豆酱,酱油,蚝油,盐;
  • 2.面粉加凉水揉成较滋润的面团,放一旁饧半小时左右,面团滋润柔软再使用;
  • 3.热锅凉油,将猪肉馅入锅中,煸炒变色;因为猪肉馅易结块,所以热锅凉油能将猪肉馅打散;
  • 4.依次放黄豆酱、酱油、蚝油增加鲜度、咸度和色泽,将酱汁与肉馅混合均匀,关火,晾凉后使用;
  • 5.用擦丝器将圆茄子擦粗丝,加3克盐充分混合后静置10分钟;
  • 6.香葱切末;
  • 7.将茄子攥干水分,与香葱末一同入酱香肉馅中;
  • 8.拌好的酱香茄子馅,如果觉得不咸,可以适量撒点盐再拌;
  • 9.饧好的面团放在案板上,撒少许面粉搓成长条,切成大小均匀的剂子,再擀成中间稍厚、边缘略薄的圆皮;
  • 10.取适量馅放在圆皮上,按自己的手法或包或者挤成饺子,全部包好的饺子白白胖胖,就等着入开水锅中痛快“洗澡”了;
  • 11.将饺子入开水锅中,煮到全部都胀鼓鼓就捞出锅;
  • 12.吃时可蘸食醇香米醋,更添风味。
