快要过年啦,这款家庭版的炙子烤肉很适合家宴。我是看电视看到了老北京炙子烤肉,把我的馋虫给勾出来了。赶紧去超市买了羊肉,回来就用厚的铸铁锅做了这款家庭版的炙子烤肉。因用锅做烧烤的味道不够,就用白酒炙烧了一会儿,这样做出了的羊肉真的好吃,而且肉还很嫩,一锅上桌,分分钟吃光光。

  • 1.买的羊肉,是羊里脊和带羊腩的部位,这个部位的肉比较嫩。
  • 2.肉切成厚度约2毫米的大片。
  • 3.姜切末,洋葱大葱切丝,香菜梗切段。
  • 4.姜末放到碗里,加入生抽,老抽,黄酒,蚝油,盐,糖和孜然粉搅拌成料汁。
  • 5.用料汁把肉抓均匀,腌15分钟。
  • 6.厚的铸铁锅烧热,倒入油把锅底全部润油就不会粘锅。
  • 7.中到大火,放入腌好的肉,不要着急翻动,煎一会儿再翻动。
  • 8.待肉变色,溜边倒入白酒,因为锅热火大,酒就会燃烧,让火自然烧到灭。
  • 9.火灭后放入孜然粉,辣椒粉,不断翻动。
  • 10.先把洋葱丝放入。
  • 11.洋葱变软。
  • 12.放入葱丝和香菜梗,再撒一次孜然粉,翻炒均匀。
  • 13.最后关火放入香菜叶。
  • 14.非常好吃的家庭版的炙子烤肉就做好啦。
