紫薯桃山月饼
这就是上次做白豆沙馅的用途了——日式桃山月饼。桃山月饼是日本和果子的一种,因起源于日本桃山而得名。其饼皮用白芸豆沙配以蛋黄、牛奶、奶油等材料调配而成风味独特,口感以细腻。桃山月饼在烘烤过程中不会变色,因而能呈现出丰富的颜色和花式。对这个东西长了很久的草,但关于饼皮,网上鲜有详细做法,大多都是买现成桃山皮粉制作的。自己不太喜欢那种现成的东西,虽然性能也许更好,还是自己做皮更有意思。

  • 熟蛋黄10 9克
  • 黄油10克
  • 可可粉3克
  • 红曲粉3克
  • 紫薯馅505克

Steps to make 紫薯桃山月饼

  • 1.准备饼皮用料
  • 2.10克蛋黄过筛成粉,加入白豆沙馅中
  • 3.拌匀
  • 4.加入黄油
  • 5.拌匀
  • 6.加入奶粉
  • 7.揉捏成均匀的面团,包上保鲜膜,松弛一会
  • 8.分割成三等分
  • 9.分别加入可可粉,红曲粉和9克熟蛋黄粉
  • 10.揉捏成均匀的面团
  • 11.分割成9克一个的剂子
  • 12.紫薯馅分割成21克的小球
  • 13.取一块皮,按扁
  • 14.放入馅料
  • 15.包起
  • 16.收口搓圆
  • 17.全部做好
  • 18.放入模具中
  • 19.扣在案台上,推下手柄,压实
  • 20.提起模具,推出月饼
  • 21.将做好的月饼摆入烤盘,表面刷水,放入预热170度的烤箱,烤约10-15分钟,
  • 22.出炉。
