孜然炒鸡心
鸡心能滋补心脏,镇静神经,中医有“以形补形”之说。另外,鸡心的口感也很好,没有异味,容易处理,不管是烧烤还是爆炒、卤水,加孜然或者辣椒,都很好吃。

Steps to make 孜然炒鸡心

  • 1.鸡心解冻,用流动的水冲洗干净
  • 2.用刀将脂肪刮到顶端,切去心管和脂肪
  • 3.对半剖开,用冷水冲净淤血。也可以切片,对半切开肉质更厚实,口感更好
  • 4.放入葱姜水中,加热到七八十度左右,捞出沥净水分,备用。此时鸡心七成熟左右,剖面稍有血丝的状态
  • 5.热锅热油,爆香蒜末,下洋葱块稍炒下一下
  • 6.倒入尖椒,稍翻炒断生
  • 7.下鸡心、盐、料酒、生抽和白胡椒粉,急火快炒
  • 8.出锅前撒少许孜然粉提味即可
