广式栗蓉、紫薯月饼
月饼一直没有敢尝试,总觉得是非常复杂,非常难的,但是随着中秋越来越进了,烘焙群里讨论月饼的人是越来越多,各种精美的月饼DIY照片是一轮接着一轮,看的我是那个心痒难耐啊,所以在几度下纠结下,俺终于还是在中秋前把月饼折腾出来了,很有成就感,很有满足感。

  • 低筋面粉90克
  • 转化糖浆65克
  • 枧水1.5克
  • 植物油25克

Steps to make 广式栗蓉、紫薯月饼

  • 1.准备好做月饼皮的所有材料。
  • 2.糖浆加植物油加枧水搅拌均匀,再加入面粉搅拌均匀,放冰箱冷藏一个小时。
  • 3.冷藏饼皮的时候真好可以炒馅,紫薯、板栗蒸好后,加黄油炒至成团,放凉备用。
  • 4.取出冷藏好的饼皮,手上沾些高粉,将饼皮分成15克一个的小份,再将馅料分成35克一个的同等小份。
  • 5.取一块饼皮放入馅。
  • 6.慢慢往上推着包。
  • 7.把馅全部包好,收口。
  • 8.月饼模具沾些高粉,将高粉倒出。将月饼放进去。
  • 9.轻轻按压成型即可。
  • 10.做好的月饼,放入200度预热好的烤箱中烤5分钟。
  • 11.烤好的月饼取出来,刷蛋黄水。
  • 12.再烤15分钟取出。放凉透后再包装。
