芝士夹心纸杯蛋糕

  • 可可粉20克
  • 玉米油50克
  • 牛奶75克
  • 白砂糖60克
  • 低粉75克
  • 奶油奶酪(夹心与顶部装饰)100克
  • 白砂糖20克
  • 淡奶油30克

Steps to make 芝士夹心纸杯蛋糕

  • 1.将玉米油放入到微波炉中加热一分钟,然后加入可可粉搅拌均匀。
  • 2.加入牛奶充分搅拌乳化后,加入蛋黄搅拌均匀。
  • 3.筛入低粉Z字搅拌均匀。
  • 4.蛋白中加入柠檬汁,分3次加入白砂糖打发至短小弯钩。
  • 5.取一部分蛋白加入到可可面糊中,翻拌均匀。
  • 6.再全部倒回到蛋白中,翻拌均匀。
  • 7.将面糊装入裱花袋中,分别挤入到带有纸杯的12连蛋糕模中。
  • 8.这次用的是美的“初见”烤箱,通过美的美居APP预热烤箱,温度140度,时间35-40分钟。
  • 9.烤箱预热结束会又提示音,将模具放入到烤箱中层进行烘烤。
  • 10.烘烤结束后,自然摊凉。
  • 11.用裱花嘴的大头部分,在蛋糕中间压一个洞,然后挤入馅料。
  • 12.这里着重说一下馅料,为了馅料与顶部状态部分的口感有所区分,馅料部分只用软化的奶酪加入白砂糖打发即可,挤完馅料之后,再加入淡奶油打发,用于顶部装饰。
