Steps to make 魔法蛋糕

  • 1.蛋清分离备用
  • 2.加入10g纯牛奶,并搅拌均匀,手法随意
  • 3.加入80g糖粉,快速划圈搅拌,一直搅拌到颜色变浅
  • 4.黄油提前隔热水热融,冷却温热时加入蛋黄液里,快速搅拌均匀
  • 5.筛入低粉,搅拌均匀
  • 6.混合后,面糊细腻光滑
  • 7.将240g纯牛奶和130g热水混合,成温热牛奶液,分2次加入蛋黄糊里
  • 8.加入香草精,混合均匀
  • 9.打发蛋清至硬性(不加糖打发)
  • 10.蛋黄液与蛋白混合,用手抽翻拌
  • 11.不用翻拌均匀,表面的蛋白用画圈形式,让它表面被蛋黄糊包裹
  • 12.6寸模具垫上油纸,然后将蛋黄糊到进模具中
  • 13.放进预热好的烤箱里中下层,150度55分钟
  • 14.蛋糕出炉不用倒扣,直接将整个蛋糕和模具一起放架子上,冷却脱模具后直接撕掉油纸
