红丝绒手绘蛋糕卷
做手绘时候,某一小朋友非要让他来画画,画得还不错~

  • 低筋面粉50g
  • 红曲米粉6g
  • 牛奶55g
  • 玉米油50g
  • 20+30g

Steps to make 红丝绒手绘蛋糕卷

  • 1.无盐黄油15g+3g色拉油放入无水的玻璃碗里
  • 2.隔热水,边快速搅拌成蛋黄酱状态
  • 3.加入10g糖粉,拌均匀
  • 4.加入15g已过筛的低筋面粉
  • 5.拌均匀即可装袋绘画,如果要调色,这时候加入色素调色以后再装入袋子
  • 6.装入裱花袋内,剪一个小小的口
  • 7.在铺入烤盘的油纸里作绘画图案,画好后放入冰箱冷藏备用
  • 8.蛋黄中加入20g糖打均匀
  • 9.加入玉米油拌均匀
  • 10.加入牛奶拌均匀
  • 11.加入过筛的低筋面粉,拌均匀
  • 12.再加入红曲米粉
  • 13.充分混合均匀
  • 14.蛋白分3次加入糖,打至蛋白霜可立起小尖角状态
  • 15.先取2勺蛋白与蛋黄,用刮刀以不规则的手法拌均匀
  • 16.再取2勺蛋白,同样的方法拌均匀
  • 17.最后,把拌好的蛋糊,一次性倒回剩下的蛋白里,同样拌均匀
  • 18.从冰箱取出绘有图案的烤盘,倒入做好的红曲蛋糕糊,振去气泡
  • 19.放入预热好的烤箱,150度左右,烤20分钟
  • 20.取出蛋糕,倒扣后揭去底部油纸晾凉,(底火还是有点高了)
  • 21.反转蛋糕,有图案的一面朝下,抹上栗子酱
  • 22.卷起来,定型后再打开
