【口水鸡】拥有铭驰巴蜀三千里,味压江南十二州之美誉,其色泽红润味道鲜辣,听起来就让人联想到出一副垂涎欲滴的模样。

口水鸡重在煮制与调味,集香、辣、麻、鲜味于一身。制作口水鸡也要用对食材才能凸显出它的美味,我采用了农家菜籽油,因菜籽油中富含亚麻酸及不饱和脂肪酸、维生素E等营养元素,能够很好的挥发出食物本身的味道,辅于川菜的烹制手法来制作这道美味的口水鸡,材料简单,口味鲜香柔辣,飘逸的清香和红油浸泽的白嫩鸡肉,让人看了不得不抿住双唇,不让口水流出来。

  • 鸡腿4只
  • 菜籽油2碗
  • 黄瓜半根
  • 花椒30颗
  • 生姜4片
  • 大葱4小段
  • 花椒粉2茶匙
  • 1茶匙
  • 香菜少许
  • 3汤匙
  • 生抽2汤匙
  • 麻油1汤匙
  • 熟白芝麻1茶匙
  • 冰水1汤碗

Steps to make 口水鸡 - 令人垂涎欲滴的美味佳肴

  • 1.锅子里放入大葱、生姜、花椒20粒,加入水。
  • 2.放入洗净的鸡腿后倒入1茶匙的菜籽油,这样可以让鸡腿更佳的鲜嫩,然后盖上盖子开大火。
  • 3.大火烧开后转中火煮8分钟,煮好后熄火盖上盖子焖15分钟。
  • 4.15分钟后用筷子戳入鸡腿里,如果没有血水渗出来即为鸡肉熟了。
  • 5.将鸡腿捞出放入冰水里泡至鸡腿冷却。
  • 6.辣椒干洗净后沥干水分,放入烤箱里100度上下火烤10-12分钟直到闻到香味,烤好后取出凉却后用剪刀剪开把辣椒籽倒出,也可以选用市售的辣椒面。
  • 7.辣椒处理好后分三次放入搅拌机里打碎,然后加入花椒粉拌均匀。
  • 8.锅子里倒入两碗(饭碗)的菜籽油,加入10粒花椒后开小火将油烧热,冒烟时即可熄火。
  • 9.将热油倒入辣椒面里。
  • 10.放入1茶匙的盐,加入熟芝麻拌一拌即成辣椒油。
  • 11.现在调配酱料,把醋、生抽和麻油放入碗里。
  • 12.加入适量的辣椒油拌均匀。
  • 13.碗里放入熟花生。
  • 14.将一半的酱料倒入碗里,让花生浸泡一会儿这样可以更加的入味。
  • 15.鸡腿降温后从冰水里取出,用厨房纸把多余的水分吸干,将鸡腿切成块后放入碗里。
  • 16.最后淋上剩余的酱料配上黄瓜和香菜即可。
