香橙卷
这款面包比一般普通面包稍复杂一点,口感象蛋糕,配了内馅卡士达酱,再覆盖糖煮橙片,橙香奶香四溢,非常好吃。刚出炉真有惊艳的感觉。

  • 低筋面粉50g
  • 奶粉7g
  • 酵母2g
  • 全蛋液25g
  • 清水80g
  • 黄油15g
  • 25g

  • 白糖20g
  • 蛋黄2个
  • 玉米淀粉8g
  • 牛奶200g
  • 低筋面粉10g
  • 鲜橙1个
  • 白糖100g
  • 清水250g
  • 蔓越莓干少许

Steps to make 香橙卷

  • 1.后油法面包体材料混合,揉至扩展阶段,室温发酵。
  • 2.卡士达酱的做法,将低筋面粉、玉米淀粉混合加入蛋黄搅拌均匀。
  • 3.牛奶加入糖煮至糖溶化,稍晾凉。
  • 4.慢慢倒入蛋黄糊中,边倒边搅拌均匀。
  • 5.将搅拌好的液体重新倒回锅中,小火加热,边煮边搅拌,直到浓稠呈浆糊状,关火晾凉放冷藏室备用。
  • 6.鲜橙用盐洗净外皮,切成约6-7mm的片。
  • 7.100克糖加入250克水中煮沸,放入鲜橙片,盖上厨房纸巾,小火煮10分钟,放凉后备用。
  • 8.面团发酵至两倍大,排气重新滚圆松弛15分钟。
  • 9.擀成长方形,压薄底边,表面抹上卡士达酱,底边不抹。
  • 10.自上而下卷起。
  • 11.分割成6份。
  • 12.切面朝上放入纸托中,放温暖湿润处发酵。
  • 13.发酵至两倍大。
  • 14.在面团表面放上沥去水分的橙片。入预热好的烤箱180度25分钟左右。
  • 15.出炉表面撒蔓越莓干即可。
