  • 1.土豆洗净去皮,宜去皮的直接刮掉,不容易去可以削掉。
  • 2.刨丝加盐和几滴醋浸泡半小时,然后过几遍水,去掉多余的淀粉。刨丝器可以买方空的 更接近切的,有人说刨土豆丝很难吃,主要是圆孔的原因。
  • 3.捞出控水至少十分钟。
  • 4.红辣椒和香菜梗切小段,蒜切片。
  • 5.锅烧热放花生油,油热后即开始要冒烟放入花椒粒煸炒出香味关火,凉一会捞出花椒不用。
  • 6.再一次开火,烧热放辣椒和蒜片煸炒。
  • 7.放入土豆丝快速翻炒几下。
  • 8.尽早的倒入一半白醋,保持土豆丝清脆。
  • 9.放入盐和一点糖提味,稍微淋点水,依然是快速翻。
  • 10.放香菜炒翻炒几下,淋入余下的一半白醋出锅。
  • 11.装盘后淋香油。
