香蕉戚风蛋糕

Steps to make 香蕉戚风蛋糕

  • 1.戚风蛋糕分为两步,蛋黄糊和蛋白的制作 :取2个无油无水的盆,分别放入蛋黄和蛋清 第一步:蛋黄糊的制作
  • 2.准备牛奶,蛋黄,糖,盐,玉米淀粉,蛋糕粉,玉米油及香蕉
  • 3.蛋黄的制作:将蛋黄,细砂糖,盐,牛奶,玉米油放到一起,用蛋抽搅拌均匀即可,不要过度搅拌,以免蛋黄被打发
  • 4.筛入蛋糕粉及玉米淀粉,翻拌均匀
  • 5.之后,过筛,如果你想蛋糕细腻完美,最好不要忽略这一步
  • 6.过筛后的蛋黄糊是否非常细腻
  • 7.第二步:蛋白的制作,准备食材:蛋清,糖和柠檬
  • 8.在盆内加入数滴柠檬汁,以免有蛋腥味【不放也可以】
  • 9. 蛋清用打蛋器低速打至鱼眼泡时,加入1/3白糖后继续打发
  • 10. 打至粗泡消失,略显细泡时加入剩下的1/3白糖,中速继续打发
  • 11.打至蛋白有些细腻纹路时,加入最后的白糖保持中速打发
  • 12.打到蛋白细腻,湿性发泡,提起打蛋器呈现出图中三角弯勾即停止打发
  • 13.之后,取三分之一蛋白放入蛋黄糊中,已经过筛好的蛋黄糊中翻拌均匀
  • 14.之后,全部加入蛋白糊中继续翻拌均匀
  • 15.全部翻拌均匀后
  • 16.倒入烤箱自带不沾陶瓷托盘,大概上下震10分钟左右,这步最好做的认真些,以便脱模后,里面的组织非常均匀,口感更好,最后放入准备好的香蕉片
  • 17.放入烤箱第四层,选择上下火独立控温模式,上火135度,下火140度
  • 18.40分钟左右,香喷喷的蛋糕就出炉了
  • 19.最后用软产划下四周,脱模,切成自己想要的形状就好了。
