黄焖牛蛙
虽不是四川人,却也喜欢麻麻辣辣的口感,非吃的一嘴皮子颤抖才觉得过瘾。有一阵子迷恋花椒,于是发挥了我不怕麻烦朋友的精神,托人从四川寄来新鲜的花椒,先是一锅麻辣鸡,再是一锅麻辣牛蛙,吃到爽为止。今天这个菜没有什么特别的想法,随手用起来的材料,随手用的做法,味道嘛还是可以一试的。

Steps to make 黄焖牛蛙

  • 1.材料备齐。牛蛙可以在市场就处理好。
  • 2.蒜米拍开,小葱白色部分切小段。因为用的几味调料都是去腥提香的,姜用不用都可以。
  • 3.炒锅放油加热,然后加入蒜米、花椒、小葱根段、煸出香味来,再加入郫县豆瓣酱炒出红油。
  • 4.接着放入牛蛙,大火翻炒。牛蛙柔嫩好熟,所以烹饪时间不宜过长。
  • 5.一罐500ml的啤酒,加入大概100ml的量。加入适量酱油、盐、少许胡椒粉和小米椒,盖锅盖大火焖制不超过5分钟。最后加入少许味精,和小葱,收汤汁的量就依据个人喜欢啦。
