茄子还有预防胃癌的作用,茄子含有龙葵碱,能抑制消化系统肿瘤的增殖,常吃茄子对于防治胃癌有一定效果。
茄子还具有抗衰老作用。茄子里蕴含的维生素E,有防止出血和抗衰老功能,常吃茄子,可使血液中胆固醇水平不致增高,对延缓人体衰老具有积极作用。因此,茄子是一种较好的保健类蔬菜。
茄子虽好,但离开了健康的制作方法,也会使其由于摄取的不合理而产生不健康的后果。所以,往往好东西也会适得其反,比如,在制作红烧茄子时,由于使用了大量的油来炸,会造成人体摄取油脂的过量,对于运动量小代谢功能又稍差的人群,常吃红烧茄子便会造成身体的肥胖。茄子类似海绵体,在炸的过程中会吸入大量的油脂,炸一斤茄子起码会吸收油脂在40克左右,计算一下,减去茄子油炸后消耗掉的水份,一斤茄子会变成350-400克,试想,一盘菜肴含10%以上的油脂能健康吗?所以,还是尽量少吃红烧的为好。

  • 青尖椒60克
  • 五花肉80克
  • 葱花10克
  • 姜末5克
  • 蒜末25克
  • 绍酒15克
  • 鲜酱油25克
  • 白糖5克
  • 精盐3克
  • 味精1克
  • 烹调油15克

Steps to make 干炒茄丁

  • 1.把茄子和青红椒切丁备用。
  • 2.把熟五花肉切丁备用。
  • 3.把茄子倒入炒锅中撒少许盐进行无油干煸,期间要用锅铲来回勤翻动。
  • 4.把茄丁干煸至微黄大约六七成熟时倒出备用。
  • 5.锅中放少许底油煸炒五花肉丁。
  • 6.把肉丁煸出油后放入葱花姜末炝锅。
  • 7.爆香后倒入彩椒丁和干煸过的茄丁。
  • 8.炒至茄丁完全熟透烹入绍酒和酱油。
  • 9.用盐、味精和白糖调味,再撒入少许胡椒粉炒匀。
  • 10.调好味炒匀后,撒入蒜末稍事翻炒便可出锅。
  • 11.此道好吃少油又健康的干炒茄丁就做好了。
