正宗的红丝绒蛋糕需要用到buttermilk和酸奶油(sour cream),一般家庭不常备这两样东西,所以就简化掉了,用我们常见的酸奶替代,虽然山寨的不是原汁原味,但味道也不错的。

  • 中筋面粉(普通面粉)72克
  • 小苏打2克
  • 1克
  • 无糖可可粉6克
  • 红曲粉6克

Steps to make 红丝绒纸杯蛋糕---家庭简易版

  • 1.软化黄油加白砂糖倒入大容器中,先用手持电动打蛋器低速将白砂糖搅入黄油,再用中高速打发,直到黄油颜色变浅,变得蓬松。
  • 2.加入鸡蛋搅打均匀。
  • 3.加入酸奶搅拌均匀,加入香草精搅匀。
  • 4.面粉、可可粉、红曲粉、小苏打、盐混合过筛,加入步骤3中。
  • 5.用橡皮刮刀混合均匀。
  • 6.将面糊平均分配倒入模具中,不超过模具的2/3。
  • 7.放入预热好的烤箱中,175℃,烤22-24分钟。中途12分钟时180度调转烤盘,使受热均匀。用竹签扎蛋糕中间,取出时无蛋液附着,干净为蛋糕烤好。
  • 8.烤熟的蛋糕取出先在模具中冷却5分钟,再移到烤网上直至完全冷却。
