南瓜泥米粉蒸蛋糕
南瓜性温,味甘无毒。含有蛋白质、胡萝卜素、及各种维生素,入脾、胃二经、不仅具有较高的食用价值,而且还具有润肺益气的作用。南瓜是我做美食利用率较高的食材,经常与面粉类相搭配做各种美食,南瓜是代替色素的天然颜色,做出的南瓜泥蒸蛋糕效果非常不错,颜色金黄,卖相颇佳、柔软膨松、入口即化。淡淡的南瓜原味,丝丝的甜香令人爱不释口。

Steps to make 南瓜泥米粉蒸蛋糕

  • 1.蛋黄与蛋清分离在两个无油无水的客器中。
  • 2.蛋黄中加入10g白糖。
  • 3.将蛋黄与白糖搅拌均匀后加入蒸熟过细筛的南瓜泥(选南方南瓜颜色比较好)。
  • 4.加入牛奶。
  • 5.将其搅拌均匀。
  • 6.筛入大米粉至盆中,上一步忘了放食用油,此步骤放入盆的右侧了。
  • 7.翻拌均匀的蛋黄糊制作完成。
  • 8.蛋白打至粗泡加入1/3白糖继续搅拌。
  • 9.搅打至稠状第二次加入白糖搅打。
  • 10.最后一次加入1/3的白糖,同时加入几滴白醋继续搅打。
  • 11.蛋白霜打至此状态即可。
  • 12.取出1/3的蛋白糊放至蛋黄糊中翻拌均匀。
  • 13.再取1/3的蛋白糊放入蛋黄糊中翻拌均匀。
  • 14.将剩余的蛋白糊全部放入蛋黄糊中翻拌均匀。
  • 15.将蛋糕糊倒入8寸模具中震出气泡,覆膜防水。
  • 16.将锅中水先烧开,再放入蛋糕模具入锅蒸30至35分钟,停火后3至5分钟后再打开锅盖。
  • 17.蛋糕蒸制完成。
  • 18.稍晾凉将蛋糕从模具中取出,蒸制的很完美(用手机正常拍照,昨晚做的蛋糕、厨房与方厅灯光不同,效果微差异、绝非美颜)。
  • 19.金灿灿的南瓜泥大米粉蒸蛋糕新鲜出炉,造型完美,用模具将紫薯粉筛至蛋糕上装饰一下非常漂亮!
  • 20.将蛋糕切二刀为四块,柔软膨松、入口即化、淡淡的南瓜味道、丝丝甜味令人爱不释口。
