腊味合蒸
腊味合蒸是湖南传统名菜之一,是取腊肉、腊鸡、腊鱼于一钵,加入鸡汤和调料,下锅清蒸而成。但是不要拘泥于一格,我今天就是改良过的一款,希望亲们能喜欢。

  • 米酒5克
  • 豆豉10克
  • 芝麻油10克
  • 味精1克
  • 蚝油5克
  • 酱油2克

Steps to make 腊味合蒸

  • 1.姜蒜分别切成米。
  • 2.干红辣椒切丁。
  • 3.葱切成葱花备用。
  • 4.腊肠和风肉切成厚约3毫米的片。腊鱼斩成小块。
  • 5.锅坐火上热油,倒入腊鱼、风肉略炒,烹米酒,加酱油、耗油翻炒均匀。
  • 6.炒好的腊鱼、风肉装到蒸碗中。
  • 7.将腊肠均匀铺在上面。
  • 8.洗锅再次热油,把干红椒碎、姜蒜末和豆豉一起下入锅中用小火炒香。
  • 9.将炒好的辣椒平铺在腊菜上。
  • 10.入蒸锅大汽蒸40分钟到60分钟。撒葱花,淋芝麻油上桌食用。
