和大家分享一下菁厨的美食——梅菜扣肉,呵呵~看上去是不是很诱人啊?老公和朋友都特别喜欢这道菜,这不上周末又想吃了,还说晚上有朋友要过来家里吃饭呢?没办法,谁叫俺这道私家菜肥而不腻,梅菜又浓郁芳香呢!这道菜N年以前就拍过照片了,出于照片拍的比较朴素,也没有步骤,所以迟迟未传上来和大家分享。好了,不多说了,马上就和大家一起分享我的梅菜扣肉的做法。

    Steps to make 一起分享私家菜——梅菜扣肉

    • 1.梅干菜洗净,用清水浸泡30分钟。
    • 2.锅里加入姜片、八角、清水煮开。
    • 3.把五花肉放进去煮30分钟,然后捞出沥干。
    • 4.调料汁:取一小碗调入高汤、耗油、精盐、白糖、生抽、老抽、鸡精。
    • 5.热锅热油,放入煮好沥干的五花肉,把猪皮的一面煎成金黄。
    • 6.然后倒入老抽,再加点水好上色,盖上锅盖焖1分钟。
    • 7.取出五花肉,将其切成1厘米左右的肉片。
    • 8.将切好的五花肉皮朝下摆在碗中。
    • 9.洗锅,热锅热油,放入蒜末、姜末爆香,倒入调料汁烧热。
    • 10.再放入洗净泡发的梅菜,炒匀后用小火烧制5分钟。
    • 11.把炒好的梅菜覆盖在肉上。
    • 12.上蒸锅用旺火蒸1小时左右。
    • 13.用一个盘子盖在蒸好的梅菜肉碗上,把蒸菜碗里的汁摒出到另一个小碗里,接着摒出的原汁加入适量高汤、鸡精、糖、耗油、依个人口味可加入少许精盐。
    • 14.然后,用手压住盖在碗上面的盘子和碗底,快速的翻扣过来,如图所示。
    • 15.取出蒸碗,梅菜扣肉就做好一半了。
    • 16.倒入摒出调好的汤汁烧沸后调入水淀粉和生抽。
    • 17.待汤汁烧沸有一点点浓稠。
    • 18.即可淋在梅菜扣肉上就可以美味出炉了。
