鱼香茄子

Steps to make 鱼香茄子

  • 1.准备一个茄子。
  • 2.茄子洗干净取蒂切成4CM左右的长条放在有水的盆里浸泡出黑水。
  • 3.用手把茄子里面的水分挤干净放在一个无水的盆里。
  • 4.上面撒上适量淀粉。
  • 5.用手把茄子拌均匀使每块茄子上都粘上淀粉。
  • 6.锅中倒油,油温六成热把茄子一根一根放进去,炸到用筷子触碰茄子有脆感捞出。
  • 7.全部炸好的茄子。
  • 8.大葱洗干净切成葱花,大蒜和生姜切末,准备剁椒和郫县豆瓣酱。
  • 9.取一小碗调鱼香料汁,里面加白糖、鸡精、味极鲜、玉米淀粉、蚝油、醋和清水搅拌均匀鱼香汁就做好了。
  • 10.锅中倒油,小火爆香葱姜蒜。
  • 11.把郫县豆瓣酱和剁椒放进去炒出红油。
  • 12.把炸好的茄子放进去翻炒均匀。
  • 13.最后把调好的鱼香汁搅拌均匀倒进去翻炒。
  • 14.炒好的茄子油光大亮,汤汁微干就可以出锅了。
  • 15.出锅装盘撒上小葱花开吃。
