围山公社浏阳菜:香菇黄豆焖火焙鱼
香菇和火焙鱼、黄豆都是鲜物,但鲜的方式各不相同,互相融合之后就浑然一体了。湖南人喜欢吃辣椒不用说,但这种较长时间焖煮的烹饪如果放干辣椒,建议在最后再煸香,否则干辣椒煸过再煮就变得软烂,而且辣而不香。

  • 1.黄豆前一夜泡发,火焙鱼用温水浸泡至软。
  • 2.香菇洗净切成薄片,姜切姜末,蒜拍碎去皮切末,葱洗净切葱花。
  • 3.锅中放油至七成热,放入火焙鱼中小火慢慢煸炒至香脆。
  • 4.将火焙鱼扒至一边,放入蒜末和姜末爆香。
  • 5.放入泡发的黄豆炒4分钟左右,放水焖煮5分钟至黄豆酥软。然后放入香菇炒1分钟。
  • 6.将黄豆等扒至一边,放入干辣椒煸香,最后放耗油、盐调味即可盛出。
  • 7.美味就成功了
