自制手擀面
重阳节那天,好朋友过生日,因为离得太远,不能为她庆生。于是,中午就在学校的食堂点了一碗砂锅牛肉面。这是第二次在食堂吃面了,第一次是妈妈过生日的时候吃的。作为北方人,不是不爱吃面,是食堂里的面实在让人没有食欲。汤料、卤料都还算可以,面真的是不好吃。粗细不一,没有嚼劲儿,食之,仅有在吃一团面的感觉,不像是在吃面条。
想起小时候,爸爸总会用一个特大的案板,用胳膊粗的擀面杖擀面吃。加之爸爸的刀工很好,做出来的面粗细均匀,非常劲道!只可惜,搬家的时候,这两样宝贝丢失了,爸爸再也没有做过手擀面了......
北京这两天下雨,天气很冷,走在路上,总能看到穿羽绒服的行人,帽子围巾也都齐装上阵。这样冷的天气,如果能窝在家里,吃一碗热气腾腾的热汤面,全身暖暖的,幸福感爆棚!
只不过,自制手擀面是一个考验臂力和耐力的活儿,做好准备了吗?

Steps to make 自制手擀面

  • 1.准备好材料
  • 2.将面粉放入盆中,放入1g盐,边加水边用筷子搅拌成絮状
  • 3.用手将絮状面粉揉成一团,因为面很硬,因此第一次揉的面团不光滑
  • 4.盖上湿布醒发10分钟
  • 5.用手揉面团至表面光滑,盖上湿布,继续醒发40分钟,继续揉至表面略光滑
  • 6.重复步骤5
  • 7.将面团放置面板上,用手揉面团,至面团光滑
  • 8.用擀面杖将面团压扁
  • 9.将压扁后的面皮继续擀薄
  • 10.从面团边缘用擀面杖卷起,边卷边用手从中间想两边依次按压,边滚动擀面杖。重复步三次,将面片展开,从另外一个方向重复此步,将面片擀至自己想要的厚度
  • 11.将面片叠起,中间铺上一层玉米面,以防粘连
  • 12.第二次折起,撒一层玉米面
  • 13.第三次折起,再撒一层玉米面
  • 14.完全叠好后
  • 15.叠好后,用刀切出想要的宽度
  • 16.切好后,抖落掉玉米面,放入容器中备用
