桃山皮月饼
桃山月饼饼皮用传统日本黄金桃山皮精制而成,风味独特,桃山皮起源于日本桃山,采用白芸豆沙配以蛋黄、牛奶、奶油等材料秘制调配而成,口感以细腻而闻名于世。将桃山饼皮运用到月饼上,改变了一直以小麦粉做月饼饼皮的传统,现今的桃山月饼颜色更丰富,而且馅料种类也更多些!正好家里剩下一袋白豆沙,原本买来裱花用的,那就试试自己做桃山皮吧!

  • 黄油25g
  • 咸蛋黄1个
  • 0.5g
  • 抹茶粉少许
  • 可可粉少许
  • 玫瑰香精几滴
  • 奶黄馅300g

Steps to make 桃山皮月饼

  • 1.网购的白豆沙
  • 2.加入提前融化的黄油和一点盐拌匀
  • 3.咸蛋黄过筛后也拌入其中
  • 4.再加入适量的奶粉搅拌均匀成不粘手的饼皮,静置半小时
  • 5.做好的饼皮分成3份,分别加入抹茶粉、可可粉、玫瑰香精,和成三色小团,每个25克
  • 6.现成的奶黄馅,按25克每个搓圆备用
  • 7.先取抹茶的小团,压扁,放上奶黄馅
  • 8.包起来收口,放入月饼模具里,我刷了点油
  • 9.倒扣在垫上油纸的烤盘上
  • 10.这是做好的三种半成品
  • 11.放入预热后的烤箱165度烤15-20分钟
