Steps to make 无比细腻轻乳酪蛋糕

  • 1.把椭圆模具压在油纸上,画出一样大小椭圆形,剪下来铺到模具中。
  • 2.黄油隔水融化备用。
  • 3.奶酪软化加糖,一个碗中加入热水,把奶酪碗坐上面隔水边加热,边用电打蛋器打发至细腻顺滑。
  • 4.搅拌好的奶酪蛋黄糊,一个个加入蛋黄,每次加入都充分搅拌均匀,直至把4个蛋黄全部加入拌匀。
  • 5.搅拌好的奶酪蛋黄糊。
  • 6.加入牛奶和5毫升柠檬,搅拌均匀。低粉和玉米淀粉混合过筛加入蛋黄糊中拌匀,加入融化的黄油拌匀。
  • 7.4个蛋白入碗中加3毫升柠檬汁打至大泡加入15克糖,继续打发。
  • 8.打发至细泡加15克糖继续打发。
  • 9.打发至出现纹路加15克糖继续打发。
  • 10.打发至湿性发泡即可。
  • 11.蛋白分3次加入蛋黄糊中。
  • 12.每次加入蛋白都充分拌匀,不要画圈,以免面粉起劲儿。
  • 13.倒入模具中,震荡。
  • 14.烤盘注水,把模具放入。烤箱预热150度,把烤盘入烤箱倒数第二层烤60分钟,烤至表面金黄即可。
  • 15.口感轻盈,入口即化。
