Steps to make 家常菜--干锅鸡杂

  • 1.准备鸡杂(鸡心,鸡肝,鸡肫)一斤,莴笋一个,胡萝卜一个,蒜苗4根。
  • 2.鸡杂洗净切片,莴笋,胡萝卜洗净切条。
  • 3.锅中烧开水把莴笋和胡萝卜焯烫一下过凉备用。
  • 4.鸡杂加入料酒,胡椒粉,糖,淀粉,生抽抓拌均匀腌制片刻。
  • 5.蒜苗切段,葱姜蒜,辣椒,泡椒,泡姜,郫县豆瓣和火锅底料全部准备好。
  • 6.炒锅倒油倒入莴笋和胡萝卜过油盛出,放在干锅底部。
  • 7.再把鸡杂倒入翻炒至变色盛出备用。
  • 8.把锅中的底油倒掉,锅洗净重新倒油,爆香葱姜蒜,泡椒,辣椒。
  • 9.加入郫县豆瓣和火锅底料炒出红油。
  • 10.倒入鸡杂。
  • 11.加生抽,糖翻炒均匀。
  • 12.倒入蒜苗炒均匀。
  • 13.加少许盐,鸡精,香油炒均匀倒入干锅中,放在酒精炉上即好。
