Steps to make 烫面油饼

  • 1.烙饼和面是关键,面团一定要活的非常软,饼吃起来口感才好,打入一个鸡蛋加入适量食盐,可以增加面的筋性。
  • 2.和面的时候一多半开水温度在90度以上,另一半用冷水,搅城大的面絮。
  • 3.活成光滑的面团,醒面30分钟。
  • 4.再来准备油酥,适量干粉加入一点盐然后浇熟油。
  • 5.搅拌均匀就像图片这样的粘稠度刚好。
  • 6.醒好的面团揉面排气。
  • 7.擀成一个大饼上面均匀刷上一层油酥。
  • 8.然后卷成长条形,切成大小均匀的面剂。
  • 9.二面封口,以免擀的时候把油酥挤出来。
  • 10.擀成一个薄薄的饼胚,越薄烙出来的冰越起层。
  • 11.锅中预热,开始放入生饼胚。
  • 12.饼二面受热,有饼一面都起鼓在烙另一面,大概2分左右一张饼就熟了。
  • 13.先来试试,酥的掉渣,太香了,一动就掉饼皮。
  • 14.因为调油酥的时候我加了一点盐所以这饼吃起来很有滋味非常香。
  • 15.层层起酥,喜欢卷菜可以在搭配一些土豆丝和葱酱那就完美。
