广式萝卜糕
萝卜糕是简单好做的广式家常点心,由传统萝卜糕演化而来的做法各有不同,但都缺少不了浓郁的萝卜香味。萝卜糕除了可以搭配不同的酱料直接食用外,由它衍生的菜肴更是不胜枚举。

Steps to make 广式萝卜糕

  • 1.白萝卜擦丝,撒盐腌制10分钟,攥去水份
  • 2.广式香肠切碎丁,香菇去蒂部切薄片,洋葱切碎。
  • 3.将粘米粉与清水混合,调入白胡椒粉,少许盐拌匀。(粘米粉与清水比例2:1)
  • 4.锅内烧热油下洋葱碎煸炒至焦黄出。
  • 5.将香肠、香菇下入锅中煸炒出香味后,调入适量XO酱翻炒均匀。
  • 6.倒入萝卜丝,调入1勺蚝油、少许胡椒粉、适量盐继续翻炒1-2分钟。
  • 7.将搅拌均匀的粘米桨倒入萝卜丝中。
  • 8.慢慢搅拌至米浆凝固。
  • 9.将蒸屉用锡纸包裹一下,倒入混合好的原料,压实。
  • 10.盖上锡纸,锅内烧开水,上屉蒸1小时即可取出。
  • 11.出锅取下模具,晾凉切块。
  • 12.放平底锅加少许油,煎至两面金黄即可。
