抹茶双色冰皮月饼
对于冰皮月饼,一直都觉得它不是咱平民的食品。在记忆里,总觉得它是属于那些达官贵人的。
第一次知道有冰皮月饼这东西时,是在很多年前,由一个爸爸当官的同学口中得知,至今都没能忘记她拿出所谓冰皮月饼时得意样子。那时候,我第一次有了贫民和贵族的感觉。
回家之后,就一直缠着妈妈给我买冰皮,但那时候的冰皮是多么的昂贵,我哭阿闹阿,但还是满足不了我那可怜的愿望,用妈妈话来说,太贵了,买它一个,会花掉一家人一天的伙食费,那时候觉得妈妈特小气,特抠门。呵呵

  • 粘米粉35克
  • 澄面20克
  • 牛奶185克
  • 糖粉50克
  • 抹茶粉两小匙
  • 紫薯馅120克
  • 豆沙馅120克
  • 色拉油20毫升

Steps to make 抹茶双色冰皮月饼

  • 1.把材料备好;
  • 2.备好手粉,手粉就是炒熟后的糯米粉;
  • 3.盆里倒入牛奶、糖粉、色拉油,搅拌均匀;
  • 4.倒入糯米粉、粘米粉;
  • 5.充分搅拌均匀;
  • 6.加入澄面;
  • 7.搅拌均匀,成为稀面糊;
  • 8.搅拌好的稀面糊静置30分钟,然后放入蒸锅,盖上锅盖,大火蒸20分钟左右,把面糊蒸熟;
  • 9.用筷子使劲地搅拌蒸熟后的面糊;
  • 10.搅拌至顺滑,然后等待其冷却,这就是所谓的冰皮了;
  • 11.冷却后,把冰皮分成两份;
  • 12.在其中一份加入两茶匙的抹茶粉;
  • 13.把抹茶粉均匀地和进冰皮中备用;
  • 14.把豆沙馅和紫薯馅分成30克一个备用;
  • 15.把和好抹茶粉的冰皮分成四份,每份40克;原色冰皮也按40克一个分成四份备用;
  • 16.在手上拍点糕粉,然后将冰皮放在手心压扁;
  • 17.在压好的冰皮中放上一块内馅;
  • 18.用冰皮把内馅包起来,并慢慢往上推;
  • 19.直好把内馅包住,收口;
  • 20.在模具里撒点糕粉,让糕粉均匀地粘在模具壁上,然后把多余的糕粉倒出来,这样做的目的是为了方便脱模。然后把包好的冰皮面团放进模具中;
  • 21.并用手压一压面团,轻轻地往下一推,漂亮的冰皮月饼就出来了,呵呵
  • 22.如果是木制品的月饼模,就在要四周磕一下,再倒出来;
