  • 1.准备食材,胡萝卜黄瓜各半根,鸡胸肉一块(约120克)花生米小半把,豆瓣酱一勺,葱一段,蒜3瓣,料酒,米醋,味极鲜酱油。
  • 2.锅中放适量的油,花生米放进去炸熟鸡胸肉切丁。
  • 3.胡萝卜切丁,提前用水焯8成熟。
  • 4.鸡胸肉切丁,加盐,白胡椒粉,玉米淀粉,一丁点糖,料酒去腥。
  • 5.搅拌均匀,如果太干可以加一点水抓匀,最后放玉米油搅拌下,锁住淀粉。
  • 6.准备调个料汁,一勺味达美米醋,2勺味极鲜酱油,一丁点盐,一勺白糖,一勺玉米淀粉,加适量的水化开,搅拌均匀。
  • 7.黄瓜切丁,和焯水的胡萝卜丁放一起备用。
  • 8.锅中放适量的油(比平时炒菜多一点)油温7-8成热下鸡肉滑炒,控油盛出来备用。
  • 9.锅中留少许底油,放豆瓣酱一勺,葱蒜,煸炒出香味。
  • 10.放胡萝卜黄瓜花生米翻炒30秒。
  • 11.加滑熟的鸡胸肉,倒入料汁。
  • 12.大火翻炒1分钟,关火出锅。
  • 13.米饭扣入盘中,浇上刚出锅的宫保鸡丁,味道甜辣浓郁,透着微酸,时蔬撘配,色泽诱人。
