八珍豆腐煲
荤素一锅烩,八珍豆腐煲,很鲜美哦。

豆腐也可以换成玉子豆腐(日本豆腐),更嫩滑。裹上蛋液和干淀粉后煎炸,其他做法一样。

    Steps to make 八珍豆腐煲

    • 1.鹌鹑蛋煮熟剥壳,鱿鱼洗净改花刀,切成小段后在开水里汆一下。
    • 2.干香菇和木耳泡发后撕成小块,胡萝卜切块,口蘑切片,彩椒和虾仁切粒。
    • 3.炒锅中放油,锅热后放入鹌鹑蛋鱿鱼和虾仁过一下油,捞出。
    • 4.豆腐切薄片。一片片煎成金黄色后捞出。
    • 5.锅中留底油,放入葱丝爆香,加入郫县豆瓣酱翻炒。
    • 6.把香菇,口蘑,木耳,胡萝卜一起放进去翻炒均匀。
    • 7.然后放入鹌鹑蛋,鱿鱼,虾仁和煎好的豆腐一起翻炒。
    • 8.加入1勺料酒,1勺老抽,1勺蚝油,少量胡椒粉,白糖和盐调味,加入半碗高汤(没有的话,用清水代替)烧开,把材料全部倒进砂锅,小火炖10分钟。
    • 9.加入彩椒,继续炖5分钟,淋入水淀粉勾芡即可。
