生姜想必都熟悉,但姜芽可能就有很多朋友不认识。姜芽是老姜在潮湿的环境里生成的嫩芽,肥嫩洁白。 一般是收成后洗净泥土进行腌制或用来烹,味道鲜嫩、味辣,清新爽口。

生姜味道辛辣,一般用来做佐料很少生食。但姜芽肥嫩洁白,腌渍后呈金黄色,酸甜可口是很好的小菜。腌姜芽最主要的是要用盐把姜芽杀出水分来再腌渍,这样腌渍的姜芽酸甜脆嫩。

Steps to make 脆腌姜芽

  • 1.嫩姜芽去老皮洗净。
  • 2.把洗好的姜芽放在通风处晾干水份。
  • 3.姜芽晾干后,放到干净无油的小盆里,按照姜芽、精盐10:1的比例洒入精盐,翻匀腌渍4小时。
  • 4.4小时后,倒出腌出来的水。
  • 5.倒入适量高度白酒。
  • 6.洒入少许花椒。
  • 7.倒入白醋,姜芽、白醋的比例是10:1.
  • 8.倒入少许酱油,增色。
  • 9.按照姜芽、白糖10:1的比例倒入白糖
  • 10.根据喜好洒入适量红辣椒、大蒜片,或者倒入蒜泥。
  • 11.拌匀后装进干净无油的容器里,腌渍一周即可食用。
  • 12.把腌渍好的姜芽分成小包装,方便食用、送人。
