  • 牛奶(布丁液)80克
  • 炼乳30克
  • 蛋黄2个

Steps to make 德式麻薯布丁挞,糯叽叽抹茶麻薯内陷、软嫩布丁、香浓酥脆挞皮。

  • 1.我们先做抹茶麻薯,把糯米粉50克、玉米淀粉10克、白砂糖20克、抹茶粉3克,全部放一起混合均匀。
  • 2.加入牛奶80克,混合均匀。
  • 3.搅拌至顺滑无颗粒,即可上锅蒸。
  • 4.隔热水蒸15分钟左右,用筷子戳底部没有浆状液体即可。
  • 5.蒸好的麻薯放在袋子,放入5克黄油或者5克植物油,揉至光滑不沾手即可。
  • 6.接着我们做挞皮,室温软化完全的无盐黄油50克,先稍微打发一下。
  • 7.筛入糖粉50克。
  • 8.打发至颜色变淡、体积变大。
  • 9.全蛋液40克,分4-5次加入,打发均匀。
  • 10.记得一定要每次打发均匀后,再加蛋液。
  • 11.筛入低筋面粉150克。
  • 12.先用刮刀拌匀。
  • 13.再用手揉成团后备用。
  • 14.把面团分成6-7个均匀的面团。
  • 15.把面团放入纸杯里,按成贴合纸杯的形状,全部做好放一边备用。
  • 16.把麻薯均匀的分成6-7份。
  • 17.放入准备好的挞皮里。
  • 18.接着准备布丁液,把淡奶油80克、牛奶80克、炼乳30克、蛋黄2个,全部混合均匀即可。
  • 19.过筛两遍,去掉大气泡。
  • 20.把布丁液倒入挞皮里。
  • 21.烤箱180℃提前预热,烤制30分钟左右。
  • 22.德式麻薯布丁挞完成O(∩_∩)O
