照烧鸡腿饭是属于日式料理,其肉质鲜嫩,味道鲜美,拌入米饭中十分入味。

  • 1.备好鸡腿
  • 2.鸡腿洗净后开始脱骨,先在鸡腿根部用刀划一圈,将鸡的皮、肉、筋与骨头分离
  • 3.再竖着划一刀,露出骨头后就可以将鸡肉扒开
  • 4.用手顺势往下扒,遇到有筋的地方,可以用刀来切割开,直到骨头彻底脱离即可
  • 5.去骨的鸡肉平摊开,用牙签或叉子扎上无数的眼,以便入味
  • 6.放入碗中,并调入盐、5g料酒、姜条和少许白胡椒粉,用手抓匀腌制30分钟以上
  • 7.在腌制期间来制作调料汁:碗中放入10g料酒、生抽、老抽、蚝油、蜂蜜、糖、水,搅拌均匀备用
  • 8.不粘锅中倒入少许食用油
  • 9.放入腌制好的鸡腿肉(鸡皮朝下),中小火煎制
  • 10.煎至两面金黄倒入步骤4中的调料汁
  • 11.将料汁烧至浓稠即可关火出锅
  • 12.切成小块,拌入米饭中,非常美味
