凉拌手撕茄条
天气太热,就喜欢做一些凉拌类的小菜,手撕茄条一直是自己比较喜欢的,可做出来虽可口却卖相不佳,这次搜索了很多资料,而且试验了三次,终于让这道美食有了一个视觉同味觉的双重完美结合。

  • 茄子1条(500克)
  • 蒜头2粒
  • 小米椒3个
  • 香葱2根

Steps to make 凉拌手撕茄条

  • 1.茄子切片,用食盐、白醋水浸泡十分钟。
  • 2.将浸泡好的茄子挤干水份,再对半切开,有皮的一面全部朝上面摆在碟内。
  • 3.锅内烧开水,将茄子隔水蒸熟。(这一次我分开了两种不同的方法来蒸,一种是加了盖的,一种是没加盖的,结果没加盖的反而颜色比加了盖的还漂亮)
  • 4.蒸茄子的时候将小米椒、大蒜、香葱切成细末,装入碗内加食盐、白糖、生抽、白醋、花椒粉拌匀,另起锅,倒食油烧至冒烟时倒入调料碗内。
  • 5.蒸好的茄子倒去多余的水份,稍凉后撕成细条。
  • 6.将步骤4的调料淋在茄条上即可。
