自制美味酱牛肉
以前吃酱牛肉,基本都是买现成的,到家一切很省事。虽然味道不错,但总是感觉偏咸,所以决定自己做。

Steps to make 自制美味酱牛肉

  • 1.牛腱子肉切大块洗净,用料酒、老抽、生抽,姜片、花椒,大料(1:1)不放水,腌制一晚上。
  • 2.焯水去掉上层沫之后,保留焯水的汤汁。
  • 3.将焯好的牛肉块捞出,准备酱制的料。
  • 4.酱制的调料用了花椒,大料,香叶,小茴香,肉蔻,干辣椒,大葱,鲜姜,老抽生抽(比例1:1),料酒,黄酱或甜面酱,冰糖。
  • 5.用焯牛肉的汤调好,把每块牛肉放进去揉一揉,然后再加汤至刚刚与牛肉等高即可。
  • 6.用高压锅的牛羊肉档,到时间后不开盖,放4个小时以上。
  • 7.然后把牛肉取出放到冰箱冷藏至少一晚上(主要为了好切片),吃之前切片装盘。
  • 8.美味酱香的牛肉做好了,咸淡适宜,散发着浓郁的酱香味,唇齿留香,太好吃了。
