Steps to make 戚风蛋糕

  • 1.准备好所有食材
  • 2.蛋白蛋黄分离。取蛋黄加入30克糖粉,搅拌均匀。
  • 3.加入牛奶搅拌均匀
  • 4.筛入低粉
  • 5.上下翻拌均匀,无颗粒。
  • 6.蛋白中加入糖粉和塔塔粉,打至粗泡
  • 7.再加入10克糖粉继续搅打
  • 8.打至提起打蛋器有个软尖角。
  • 9.再加入10克糖粉,打至提起打蛋器有个硬性的尖角
  • 10.取1/3蛋白糊加入蛋黄糊中
  • 11.翻拌均匀。不能画圈搅拌。
  • 12.然后将将拌好的蛋黄糊倒入蛋白中
  • 13.继续上下翻拌均匀
  • 14.倒入模具,进烤箱。165度30分钟,150度再烤30分钟
  • 15.拿出后即可倒扣晾凉,再脱模
