辣子鸡
辣子鸡是一道经典的川渝地区的特色传统名肴,因缘于重庆歌乐山而得名。此菜色泽棕红油亮,麻辣味浓。咸鲜醇香,略带回甜。以鸡为主料,加上葱、干辣椒、花椒、盐、胡椒、味精等多种材料精制而成,营养丰富,味道鲜美。

  • 白糖少许
  • 胡椒粉少许
  • 酱油2勺
  • 半勺
  • 鸡精少许
  • 料酒1勺

Steps to make 辣子鸡

  • 1.鸡腿洗净剁成小块,用料酒和盐腌制一会。用整鸡也非常不错!
  • 2.备好葱姜蒜
  • 3.干辣椒掰开,籽也要的。
  • 4.起锅热油,放鸡块炒至表面金黄。
  • 5.捞出控油
  • 6.另起锅热油,下姜蒜煸香。再放干辣椒和花椒粒炒香。
  • 7.要小火,火大辣椒就糊了。放入炸好的鸡块,调入酱油、胡椒粉、糖,鸡精。尝尝咸淡,要是淡就再放点盐。(盐不要放多,刚才腌制的时候已经撒盐了)
  • 8.撒上葱段,翻炒均匀出锅即可。
