栗子烧鸡

Steps to make 栗子烧鸡

  • 1.一只整鸡剁成大块后焯水去血沫子,捞出控水备用。也可以选择只用鸡腿和鸡翅来做这道菜!

  • 3.冷锅放入比日常炒菜多谢些的植物油,冷油放入花椒和大料,小火2分钟爆香花椒和大料后放入干红辣椒、姜以及大蒜和冰糖翻炒片刻。
  • 4.放入焯过水的鸡肉翻炒,然后放入老抽花雕酒继续翻炒2-3分钟。
  • 5.加入适量开水、和香菇以及栗子肉焖煮30-40分钟左右,出锅前10分钟加盐。我用的是三黄鸡,肉质比较嫩,30-40分钟鸡肉就完全成熟了,如果用高品质的老母鸡的话建议用高压锅压30分钟左右或是炖1.5-2小时。用三黄鸡时炖的时间短,开水不用加太多,最后稍微收汁,汤汁只留少量即可!浓郁的汤汁会让鸡肉口感更好!
