【烤鲐鲅鱼】--寒冬最美味的烤鱼
鲐鲅鱼又称青占鱼、鲭、青花鱼、白腹鲭、日本鲭等,是辐鳍鱼纲鲈形目鲭亚目鲭科的其中一种。

鲐鲅鱼和鲅鱼都属于海水鱼类。体型基本相似,所以经常被误认为是同一种鱼,通称为鲐鲅鱼。两者的主要区别是:
从体高辨别:鲐鱼鱼体较高,呈椭圆状;鲅鱼鱼体较长,呈圆状。
从背鳍辨别:鲐鱼两个背鳍间距较远;鲅鱼两个背鳍紧靠。
从尾鳍辨别:鲐鱼尾鳍上下各有5个小脂鳍;鲅鱼尾部上下各有8-9个小脂鳍。
从颜色辨别:鲐鱼背部呈青黑色,有不规则的深蓝色斑纹,腹部淡黄色;鲅鱼背侧为黑蓝色,并有许多黑色圆形斑点,腹侧银灰色,腹部为灰白色。

鲐鲅鱼属于是经济型的一种鱼,在我们海边这种鱼价格非常便宜,鲐鲅鱼虽然价格不贵但是营养价值却一点都不低的,鲐鲅鱼含有丰富的蛋白质和多种人体需要的氨基酸,鲐鲅鱼的矿物质含量也很多。所以用鲐鲅鱼来做成很多种家常菜来,大家对鲐鲅鱼烹饪方法知之甚少。其实,新鲜的鲐鲅鱼红烧、家焖、腌制及干炸等烹饪方法很多,做好了味道都很鲜美。

这次我用新鲜的鲐鲅鱼简单腌制后,用烧烤店的烤鱼方法烤制,由于鲐鲅鱼油性非常大,烤制过程中,高温将鱼油都烤制出来,滋滋做响,在烤制过程中撒上大量的孜然面和辣椒面,鱼的鲜美肉香加上孜然和辣椒的独特香气和辣味,让这道烤鱼在这寒冷的冬天更加温暖有味道。

  • 辣椒面30克

  • 鱼露3大勺
  • 料酒3大勺

Steps to make 【烤鲐鲅鱼】--寒冬最美味的烤鱼

  • 1.主料:新鲜鲐鲅鱼1条配料:香葱末适量调料:孜然面20克、辣椒面30克、盐1小勺、鱼露3大勺、料酒3大勺
  • 2.鲐鲅鱼洗净后,从鱼背处用刀剖开后将鱼展开
  • 3.加入盐1小勺、鱼露3大勺、料酒3大勺,将鱼全部抹匀,腌制15-20分钟
  • 4.烤盘铺好一层锡纸,锡纸底抹一层食用油,将腌制好的鱼放在烤盘上
  • 5.入烤箱上下火,上火180度,下火230度,烤制15分钟
  • 6.15分钟后取出撒上孜然面和辣椒面
  • 7.再入烤箱上下火都调至230度烤制5分钟即可,食用前撒上香葱末即可
