自制红豆沙
红豆沙很多厨娘都会选择自己制作,一般无外乎两种方法,去皮和不去皮。传统去皮洗沙法做出的我很喜欢,因为非常细腻,但缺点是费时费力;不去皮煮熟用普通料理机打的口感与洗沙法细腻的口感总是有差距。现在好了,有了维仕美破壁料理机,煮熟后再一打,做出的细腻口感完全可以与洗沙法媲美,而且省时省力。

    Steps to make 自制红豆沙

    • 1.红豆先浸泡一夜,先用冷水煮开一次倒去水。
    • 2.再加适量水用高压锅压烂。
    • 3.把煮好的红豆放入破壁料理机中,如果煮好的豆子没水分了,需再加点开水,以便充分搅打。
    • 4.调到酱料档,打1-2分钟即可成为非常细腻的状态。
    • 5.把打好的豆沙用刮刀刮到锅中。
    • 6.加适量黄油和白糖中小火炒。
    • 7.炒到自己喜欢的软硬度。(炒的时间可根据自己喜欢豆沙的软硬程度调整。)
