【四川】酸辣土豆丝
酸辣土豆丝是一道非常平常普通的家常美食,其主要是土豆丝爽脆 有着醋香微辣。 十分的开胃下饭!该菜具有开胃健脾、降低高血压、补充维生素C,及补充能量的特性。 虽然是一道家常美食但是喜欢的人非常的多,做法也是林林总总 眼花缭乱。但是作为主要调味的两种是必须那就是“老陈醋”与“干辣椒”,没了这两味那么这个菜就没有特色可言。
众所皆知土豆是一种非常容易氧化的食材,一氧化发红那么整个菜的美观上。口感上都会大打折扣,所以在制作的时候要非常的注意。 从土豆刮皮开始就要注意食材的变化,这里就要用一个日常步骤。把刮完皮的土豆泡在水里面,防止土豆氧化发红。清洗后根据习惯可以切成细丝或用擦丝器擦成丝,然后清洗数次去除淀粉泡在水里一会以备用

  • 1.把食材处理准备好,即可炒制
  • 2.锅热油小火爆香干辣椒,倒入蒜碎爆香。加入少许的细盐
  • 3.倒入青红椒丝及土豆丝,并下少许味精调味
  • 4.转大火翻炒数下,老陈醋沿锅边甩开泼入。这样的话香而少酸味道更好
  • 5.不推荐使用白醋。虽然颜色看起来不错但是失去了香味那么一盘开胃香辣的酸辣土豆丝就完成了
