焖牛腩

  • 牛腩750g
  • 花椒约20粒
  • 干辣椒2个(喜欢吃辣的就多加)
  • 香叶4片
  • 红葱头2个
  • 蒜头8粒
  • 一大块
  • 八角5粒
  • 少许
  • 生抽一大勺
  • 老抽一大勺
  • 冰糖半碗
  • 胡椒粉一勺

Steps to make 焖牛腩

  • 1.准备好各种香料:花椒、八角、香叶、干辣椒、姜片、蒜头、干葱头。
  • 2.牛腩切成约3厘米厚3厘米长的方块。
  • 3.清洗干净。
  • 4.冷水下锅,放入牛腩块、一点姜片(用刚才切姜的一些边角料),一大勺料酒。
  • 5.大火烧开,焯水5分钟,撇去浮沫。
  • 6.捞出用冷水冲洗掉粘在肉块上的浮沫。
  • 7.捞出沥干水份。
  • 8.起锅烧油,加入约10粒冰糖粒。
  • 9.中小火熬制冰糖融化,变成琥珀色。
  • 10.倒入沥干水份的牛腩。
  • 11.翻炒一分钟。
  • 12.让牛腩块充分上色,并煎到边边角角微微发黄。
  • 13.放入除胡椒粉外的所有香料。
  • 14.继续翻炒,到香料发出香味。
  • 15.加入:生抽一大勺、老抽一大勺、料酒一大勺、少许盐,继续翻炒到肉块充分吸收酱汁(约炒3分钟)。
  • 16.倒入高压锅中,加入几粒冰糖粒、一勺胡椒粉,加入漠过肉块的水。
  • 17.高压锅大火烧开转中火,烧5分钟,转中小火烧15分钟,小火烧5分钟,关火后焖10分钟。
  • 18.焖好的牛腩倒入大碗中,可配白米饭、可配面条,牛腩咸鲜、美味。
