小炒攸县香干
“攸县香干”之所以遐迩闻名,一是:攸县的水质好,极少污染;“攸县香干”的加工工艺讲究。做香干,用水最重要。攸河上游的酒埠江,汇入了漕泊禹王洞的天然矿泉水、皮佳洞过滤的阴河水和柏市的温泉水,有益于人体健康的矿物质和微量元素丰富,造就了独一无二的、符合绿色环保要求的水质。不少外地人买回攸县的黄豆,按照攸县人教给的工艺丝毫不差地进行操作,但制作出来的香干,无论是质地还是色泽,更莫说口味,均不能与“攸县香干”相比。二是:“攸县香干”的制作很讲究。首先必须选择新鲜的黄豆,剔除杂质后洗净,用水浸泡数小时,让黄豆吃透水,之后磨成浆,滤去豆渣,适当加温后放置于容器内,与掺入的石膏水搅拌均匀,待豆浆将要凝固时,再用瓢将豆浆舀出,放到事先准备好的木箱内,轻压并滤干水分,即成香干。这一道道工序,都必须认真对待。长途运输困难,保存是瓶颈“攸县香干”好吃,但因为香干是“易碎品”,难保存,难运输,想在攸县之外吃到“攸县香干”并非易事。

Steps to make 小炒攸县香干

  • 1.将攸县香干,微微斜切成厚片。
  • 2.将海红椒、湖南椒切成圈,大蒜切成片。
  • 3.将大蒜苗根和叶分别切成长段。
  • 4.锅内烧开水,将香干入锅氽水后捞起沥干水分。
  • 5.起锅倒入适量油,油热后,放入海红椒、湖南椒、大蒜、大蒜苗根部炒香。
  • 6.加入攸县香干,调入适量盐、蚝油、酱油翻炒均匀。
  • 7.待香干上色,溢出香味后,倒入水淀粉翻炒均匀,以保证香干嫩滑之感。
  • 8.汁水透明时,调入鸡精,加入大蒜苗叶子部分快速翻炒3秒,关火即成。
  • 9.出锅装盘。
