糖醋子姜:温补阳气的开胃小吃
小的时候,我是不爱吃姜的,即使是蒸鱼的姜丝,我也要把它挑出来丢在一边。但长大后,因为体寒湿气重,所以只能遵医嘱,尽量多吃姜,久而久之就爱上了姜那将独特的辛辣芳香。姜真的是好东西,尤其是夏天食用更佳,可开胃健脾,促进食欲;防暑、降温、提神。
若不喜欢姜的辛辣,其实可以在夏天选择子姜,用白糖和米醋来浸泡做成酸甜可口的醋姜,既开胃又可温中散寒。但要记得醋姜虽好,但要在中午之前食用,因为民间素有“早上吃姜,胜过吃参汤;晚上吃姜,等于吃砒霜”一说。

  • 1.挑选姜芽较多的子姜,去除红色的外皮,将其洗净,沥干水分。
  • 2.切成薄片,越薄越好。
  • 3.加入盐。
  • 4.拌匀,静置2个小时左右,让其释出水分。
  • 5.将子姜摊开,晾干。
  • 6.将晾干的子姜放入瓶中。
  • 7.加入白糖。
  • 8.加入米醋。
  • 9.腌制过夜,即可食用。
