粉嫩酸奶生日蛋糕
从来没有试过用加了淡奶油的自制酸奶做酸奶蛋糕,原来用这样的酸奶做出来的蛋糕是如此细腻,切面看似慕斯,口感像芝士蛋糕,味道是酸奶特色,搭配新芒果,奶油,真的好好吃哦~

  • 柠檬汁5滴
  • 细砂糖65克
  • 酸奶250克
  • 玉米粉35克
  • 低筋面粉95克
  • 鸡蛋5只
  • 芒果1只
  • 芝士奶油霜200克
  • 细砂糖35克
  • 淡奶油350克

Steps to make 粉嫩酸奶生日蛋糕

  • 1.900克的纯牛奶,100克的蓝风车淡奶油,100克的细砂糖,1克普泽的益生9菌粉,轻轻搅拌均匀。
  • 2.放入酸奶机发酵9个小时出炉。
  • 3.新鲜出炉的热酸奶称量250克到打蛋盆里,稍微冷却一下后加入5个蛋黄,搅拌均匀。同时160度上下火开始预热烤箱,烤盘装入冷水,放最底层。
  • 4.然后筛入低筋粉和玉米淀粉。
  • 5.搅拌成顺滑无颗粒状态,这是蛋黄糊。
  • 6.往5个蛋白里滴入5滴柠檬汁。
  • 7.分三次加入65克细砂糖,打发蛋白。
  • 8.打发至提起打蛋头出现小直尖状态(硬性发泡)。
  • 9.将蛋白与蛋黄糊切拌混合均匀。
  • 10.8寸圆形固底模具放入一张8寸的吸油纸,然后在油纸上刷上一层薄薄的色拉油,倒入蛋糕糊,震荡出大气泡。
  • 11.放入倒数第二层的烤架上,最底层热水浴。温度转为150度烘烤70分钟。
  • 12.出炉后冷却,脱模。
  • 13.将打发了的淡奶油将蛋糕抹面。
  • 14.芝士奶油霜加入少许红色素,用扁齿嘴编织花篮纹路。
  • 15.最后在表面摆上新鲜的芒果肉粒,放上装饰的花朵和猪猪即可。
