海绵分蛋蛋糕
吃多了细腻绵软的戚风,偶尔来点口感稍微强韧的海绵蛋糕,感觉还是不错的。这款分蛋海绵蛋糕,用的是君之的方子。我喜欢用来做慕斯的夹层,因为它比较坚挺,做慕斯更加有型。

  • 细砂糖蛋白用45g
  • 低筋面粉90g
  • 细砂糖蛋黄用30g
  • 糖粉少许

Steps to make 海绵分蛋蛋糕

  • 1.全部材料.
  • 2.分离蛋白蛋黄.盛蛋白的盆需无油无水.
  • 3.蛋清分三次加入细砂糖打发至如图的挺拔尖峰状态.
  • 4.蛋黄加入细砂糖.
  • 5.打发至体积膨大且颜色变浅的蛋黄糊。
  • 6.将一小半打发好的蛋白加入蛋黄糊中。
  • 7.将蛋白和蛋黄用刮刀翻拌均匀。
  • 8.向混合好的蛋白蛋黄中加入过筛好的低筋面粉。
  • 9.尽快将面粉和蛋白蛋黄糊翻拌混合均匀,形成轻盈,膨松,细腻且浓稠的混合物。
  • 10.将蛋糕糊倒入模具中,在毛巾上震几下,使蛋糕糊平整。
  • 11.将模具放入上下层预热好180度的烤箱中层,烤25分钟。
  • 12.烤好的蛋糕取出放晾后脱模。
  • 13.切块享用吧。喜欢的话在表面加少许装饰,我用了一点点糖粉。
