波兰种红薯面包

  • 红薯泥150g
  • 鸡蛋1个
  • 白糖30g
  • 4g
  • 耐高糖酵母3g
  • 玉米油30g

Steps to make 波兰种红薯面包

  • 1.波兰种材料混合均匀,室温下放置1小时,再放冰箱冷藏17小时至表面泡泡明显。
  • 2.红薯去皮蒸熟,压成泥。
  • 3.主面团除玉米油外的其他材料和波兰种一起放入厨师机,揉面至稍具薄膜。
  • 4.加入玉米油,揉至出手套膜。
  • 5.滚圆放碗中,盖保鲜膜发酵至变大(室温在28度左右)。
  • 6.轻拍排气,均分9份滚圆,盖保鲜膜醒15分钟。
  • 7.松弛好的面团擀成圆形。
  • 8.再整成圆形,排放在金盘中。
  • 9.放入温暖湿润处发酵(烤箱下层放一碗温水)。
  • 10.发酵至2倍大后,薄筛一层高粉,用刀片割花纹。
  • 11.烤箱200度提前预热,中层烤18分钟。
  • 12.取出放烤网上晾凉至手温,放保鲜袋密封。
