熘鱼片【糖醋口味】
“熘鱼片”是鲁菜中历史久远的传统菜品。今天我用人人爱吃的糖醋口,做了糖醋熘鱼片。其口感鲜嫩滑爽,酸酸甜甜的令人回味不尽。

Steps to make 熘鱼片【糖醋口味】

  • 1.草鱼去鳞、鳍、鳃和内脏洗净。
  • 2.准备好葱姜。
  • 3.把木耳洗净,撕成小朵。
  • 4.取一碗,加入米醋 生抽 糖 料酒 淀粉和清水兑成糖醋汁备用。
  • 5.草鱼去头 去尾。将鱼从中间劈开,去掉鱼骨。
  • 6.用斜着把鱼肉片成鱼片。
  • 7.片好的鱼片加入盐和料酒腌制20分钟。
  • 8.腌好的鱼片均匀粘满干淀粉。
  • 9.下入6成热的油中,炸至表皮微黄,捞出沥油。
  • 10.锅中留底油,爆香葱姜。
  • 11.下入木耳煸炒均匀。
  • 12.倒入糖醋汁,烧开至黏稠。
  • 13.倒入炸好的鱼片。
  • 14.快速翻炒均匀,使每个鱼片都能均匀沾满糖醋汁即可。
