  • 猪排骨700克
  • 土豆2个
  • 青椒3个
  • 菜籽油1汤匙
  • 50克
  • 料酒6茶匙
  • 豆瓣酱2茶匙
  • 红苕粉1茶匙
  • 1茶匙
  • 胡椒粉1茶匙
  • 花椒面1茶匙
  • 鸡精0.5茶匙
  • 十三香0.5茶匙
  • 香菜3根
  • 芹菜2根
  • 小葱1根
  • 少许
  • 干海椒少许
  • 花椒少许
  • 白芝麻少许

Steps to make 炒排骨

  • 1.排骨泡洗后,冷水下锅,放料酒、姜片氽水。
  • 2.冲洗后,倒入高压锅,加冷水淹过排骨,放盐、胡椒粉、料酒、十三香、姜片压十分钟;
  • 3.倒出沥水。
  • 4.洒红苕粉,拌匀。
  • 5.土豆、姜、蒜切片,芹菜、香菜、小葱切颗。
  • 6.多油,烧至六七成热,倒入排骨;
  • 7.炸至排骨表面起硬壳,捞出。
  • 8.放土豆片炸;
  • 9.表面起硬壳捞出。
  • 10.倒出多余油,小火,下豆瓣酱、姜、蒜、芹菜、干海椒条、花椒炒香;
  • 11.倒入排骨、土豆翻炒;
  • 12.放花椒面、鸡精;
  • 13.下青椒块翻炒;
  • 14.大火,淋料酒翻均匀、洒白芝麻即可。
