Steps to make 像云朵一样柔软的蛋糕【香橙乳酪烫面戚风】

  • 1.1、将鸡蛋蛋黄和蛋白分离,蛋黄里加入20克糖拌匀.
  • 2.2、低粉过筛备用,橙子取汁,取皮屑备用.
  • 3.3、橙汁里加入油、乳酪隔水加热至65度。
  • 4.4、将3中加热的混合液体倒入过筛的低粉中拌匀至无颗粒状面团,将橙皮屑加入蛋黄中拌匀,再倒入烫好的低粉面团切拌均匀。
  • 5.5、蛋白打至粗泡开始加糖,分三次加入,打发至呈小尖角。
  • 6.6、将打好的蛋白取三分之一加入到拌好的蛋黄糊中,再加入剩余的蛋白切拌均匀,倒入模具中震两下放入预热160度的烤箱,再调至150度烤50分钟即可。
