【闽菜】兴化焖豆腐
兴化焖豆腐,莆田人爱吃焖豆腐,这道菜在莆田的农村办婚宴习俗中是不可缺少的一道名菜.特别是那些离乡游子,回乡时对这道传统名菜更是情有独钟。此菜主料用鲜豆腐,含有较多的不饱和脂肪酸,具有补中益气、和胃清肺、生津化痰的功用。

  莆田盛产制作豆腐的黄豆,特别是一种称为“九月珠”的皮色鸭蛋绿的黄豆有名,其豆粒个大象花生,每逢秋天刮起九月风时,“九月珠”也就成熟了,晒干后成为加工豆腐的上等原料。乡下人用“九月珠”加盐卤做的豆腐,细嫩好吃。

    • 11.把蛋液均匀的洒在豆腐上焖上20分钟即可出锅。
    • 12.此菜特点:质地柔软,润滑爽口。
